 2 cups diced cooked veal, lamb or ham
 3 ripe bananas
 ½ cup diced pineapple
 ½ cup diced celery
 1 tsp prepared mustard
 ¼ cup mayonnaise
 Lettuce
 ¼ cup sliced stuffed olives
 ¼ cup chopped walnuts

Peel and dice bananas and mix lightly with meat, pineapple, and celery. Combine mustard and mayonnaise and toss with banana mixture. Serve on crisp lettuce leaves and garnish with sliced olives and walnuts.
Yield: 6 servings
