A Sampler of Modern Sour Cream Recipes, 1950

 2 tbsp butter
  cup finely chopped onion
 2 tbsp sugar
 6 cups shredded red cabbage
 ½ cup red wine vinegar
 2 tsp salt
 1 cup diced cooking appleabout 1 large apple
 2 tbsp sugar
 1 ½ cups sour cream at room temperature
 Apple slices for garnish

In skillet melt butter; saute the onion with 2 tablespoons sugar 5 minutes. Stir in cabbage, vinegar, and salt; cover and simmer 10 minutes. Add apple and 2 tablespoons sugar; cover and cook about 5 minutes. Transfer to heated platter; spoon sour cream over center of the cabbage. Garnish with apple slices, if desired.
