Sift together flour, salt, and cinnamon, set aside. Cream the butter and cream cheese until light and fluffy. Gradually add the sugar and mix thoroughly. Beat in the egg yolk and add the vanilla (juice, if using) and orange rind. Gradually blend in the sifted dry ingredients until well-mixed. This dough can either be put through a cookie press or chilled and rolled out.
Bake in 350-degree oven for 10 to 12 minutes on ungreased cookie sheets.
