We always called this recipe by it's funny name "Lemon Goober Stuff" it also is called "Lemon Cream Dessert". it is a staple at Thanksgiving, Christmas Dinner, Easter, it is light and foamy and tangy with lemon and pineapple, one of many Jell-O recipes from our family collection of the 1950's and 1960's.

 2 ½ cups Shortbread Cookies, crushed
 1 evaporated milk
 1 ¾ cups boiling water
 1 Lemon Flavor Jell-O (large package)
 ¼ cup Lemon Juice (real)
 ½ cup Sugar
 ½ cup crushed pineapple(optional)

Place Half of crushed shortbread cookies in the bottom of a 9 x 13 dish. Mix Jell-O, sugar and boiling water and chill until slightly thickened. Have Evaporated milk chilled until ice forms around the edge of the can; whip in large bowl until stiff, add lemon juice and whip until smooth, add a half cup of crushed pineapple if desired. Add Jell-O mixture to the whipped evaporated milk and whip until smooth. Pour into the prepared dish and sprinkle with more cookie crumbs. chill until firm.
