Gingered Pear and Chicken Salad

Yields1 Serving

 1 package lime flavored gelatin
 1 cup hot water
 1 cup ginger ale
 3 tbsp lime juice
 8 pear halves
 1 envelope unflavored gelatin
 ½ cup cold water
 1 egg yolk
 1 can cream of celery soup
 1 egg white, beaten stiff
 6 oz cubed chicken, leftover or canned
 ½ cup whipping cream, whipped

Dissolved lime-flavored gelatin in hot water. Cool until the mixture starts to thicken. Add ginger ale; spoon over pear halves arranged in 1 1/2 quart ring mold. Chill.


Dissolved unflavored gelatin in cold water. Add egg yolk to soup and heat to boiling. Remove from heat and stir in gelatin. Chill until the mixture thickens slightly. Light fold in remaining ingredients. Pour carefully over the jellied lime layer. Chill until firm, about 4 hours. Unmold on a bed of lettuce or chicory.
Yield: Serves 8
