Butterscotch Rolled Cookies

2 ⅓ cups brown sugar
1 tsp salt
1 cup butter or margarine
2 Eggs
1 tsp vanilla extract
3 ½ cups sifted all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
Decorating Glaze
1 ½ cups powdered sugar
1 egg white
1 tbsp melted butter or margarine
⅛ tsp salt
½ tsp vanilla extract
1Mix sugar, salt and butter thoroughly in large mixing bowl. Beat eggs and extract into mixture until light and fluffy.
2Sift together flour, baking powder, soda, and cinnamon; gradually blend into sugar ingredients. Chill well.
3Roll dough 1/8th inch thick on well-floured board. Cut into fancy shapes. Place on ungreased cookie cheese. Bake in 350 degree oven for 8-10 minutes or until brown around the edges. Remove to cooling rack. Decorate with glaze as desired. Store in airtight container.
Yield: 6 to 10 dozen cookies
Decorating Glaze
4Blend powdered sugar into egg white. Add melted butter, salt, vanilla extract; beat until smooth. If the glaze is thin, add more sugar. Divide glaze into several parts. Tint as desired with food coloring. Apply the glaze to cookies with a decorating tube or paintbrush.
