Loverboy Pudding Cake
  • 1½ cups Bisquick baking mix
  • ⅓ cup sugar
  • 1 egg
  • ½ cup water or milk (warmed)
  • 2 oz semisweet chocolate, melted and cooled slightly
  • 2 Tablespoons shortening
  • 1 teaspoon vanilla
  • 1½ cups water
  • ⅔ cup sugar
  • 6 oz semisweet chocolate pieces
  1. Blend baking mix, ⅓ cup sugar, the egg, ½ cup warmed milk or water, the melted chocolate, shortening and vanilla in a large mixer bowl on low speed for 30 seconds, scraping bowl frequently. Beat 4 minutes medium speed.
  2. Pour batter into greased and floured 9x9 inch square pan.
  3. Combine 1½ cups water and ⅔ cup sugar in saucepan. Heat to boiling, stirring occasionally. Remove from heat; stir in chocolate pieces until melted.
  4. Pour chocolate mixture carefully over batter. Do not stir.
  5. Bake 35 to 40 minutes or until cake tester inserted in the middle comes out clean. While hot, spoon cake into dishes, spoon pudding over cake.
