Bacon Muffins
  • 2 slices bacon
  • 2 cups flour
  • 3 t. baking powder
  • ½ t. salt
  • 3 T. sugar
  • 1 egg
  • 1 C. milk
  • 2 T. bacon fat
  1. Grease muffin pans with 12 medium cup capacity.
  2. Pan broil bacon until done, drain and crumble.
  3. Sift flour, measure and resift 3 times with next three ingredients, the last time into 3 qt. mixing bowl. Add crisp bacon and stir.
  4. Beat egg, stir in milk and melted fat. Add to dry ingredients all at once; stir quickly until flour is just dampened, then give 4 or 5 more stirs. Batter should not be smooth.
  5. Spoon into prepared pans, filling cups ⅔ full. Bake at 425 degrees for 20 minutes or until browned.
*The cooking time on these muffins seems a bit high. I would reduce heat to 350 degrees. *More of a muffin than a biscuit. If you make these, be sure to add extra fat (butter or oil) , extra bacon and eat while hot!
